Course Description

If you can stand the heat and love to cook, step into our professional standard kitchens and serve up a five-star career in hospitality and catering.

Educational visits to hotels, markets and overseas destinations will provide you with a memorable learning experience and help you strive to achieve your ultimate goals.

This is also an ideal programme for those already working in the industry who wish to extend their food and beverage skills, as well as for mature students wishing to change careers.

Your programme will cover various practical products ranging for breads, tarts, cakes, curries, stews and tarts as well as some butchery of meat and flilleting of fish. In the theorical classes, you will learn the comodities of the various products. You will also have written assignments to complete over the course of the year.

Practical work experience will also be provided in one of the College's fine dining eateries, McLeods Restaurant. You'll also have the opportunity to enter competitions, learn tips and be set challenges from a range of industry speakers, and gain inspiration for your own dishes with visits to Billingsgate Fish Market, Borough Market, Paris, Seville and the HRC trade show.

On passing the Food Safety qualification, you will also receive a Level 2 Food Safety certificate.

Other Important Information

> You will need to purchase a Chef's uniform and knives. Your uniform and equipment must be purchased from our preferred supplier. Full details will be provided at enrolment
> You will have one online exam on food safety, six theory short answer tests, four written assignments, six practical tests and two synoptic practical exams.

Future Prospects

Successful completion of the course will significantly improve your employment prospects in the hospitality and catering business, both at home and abroad. Alternatively, you may progress to an apprenticeship or further study on the level 3 Advanced Professional Cookery course.

Entry Requirements

Four GCSEs at grade 3 or above including English or maths at 3 or above, or progression from a Level 1 qualification. Relevant professional experience may be applicable.
