Course Description

Put your culinary skills truly to the test by planning, preparing and serving meals in one of our two fine-dining restaurants.

You will have the opportunity to supervise a kitchen team while also learning about recipe development, food sourcing and production. Develop your skills from the level 2 qualification with advanced pastry, butchery, filleting of fish and more!

Our amazing kitchens are all industry standard, giving you the range of skills needed to progress into the industry. All of our lecturers are from the industry, and are best placed to advise you in your next steps. You'll also have the opportunity to enter competitions, learn tips and be set challenges from a range of industry speakers, and gain inspiration for your own dishes with visits to Billingsgate Fish Market, Borough Market, Paris, Seville and the HRC trade show.

This programme is intended for those wishing to become chefs but is also ideal for those already working in the industry.

Other Important Information

> You will learn through a combination of theory lessons, practical tasks and educational visits
> Your work in the kitchen will be observed and assessed. You will also undertake assignments and unit tests to establish your learning at this level
> This is a study programme which includes English, maths and work experience in addition to your main programme

Future Prospects

Successful completion of the course will lead to excellent job prospects in hospitality and catering, and/or progression to a higher education course such as the HND/HNC in Hospitality & Events Management at MidKent College. You could become a development chef for a food retailer and further study could lead to a career in health and nutrition.

Entry Requirements

Five GCSEs at grade C/4 or above including English and maths at grade C/4 or above.
